Cheddar Bay Biscuits

Forget going to Red Lobster to eat Cheddar Bay Biscuits. This is the easiest recipe EVER. You can use flour and make the biscuits from scratch or you can simply use Bisquick. The flavor is still amazing.

Cheddar Bay Biscuits

Ingredients

    For the Biscuits
  • **Substitute with Bisquick following box directions & add cheese to make it even easier!
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 3/4 cup milk
  • Brush on Top:
  • 1/3 cup melted butter
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon garlic salt

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl whisk together the flour and baking powder.
  3. Use 2 knives to cut in the butter until small pea-sized crumbs form.
  4. Add the cheese and toss until coated with flour.
  5. Add the milk and stir until just combined - DO NOT OVERMIX!
  6. Drop by 1/4 cup fulls onto the baking sheet about 2 inches apart.
  7. Bake 14 - 16 minutes until golden around the edges. Meanwhile, in a small bowl combine melted butter with parsley and garlic salt.
  8. Remove the biscuits from the oven and brush butter generously over the tops while hot.

Thanks to Wegmans, I spied with my little eyes something that looked delicious when I went to get groceries and even though I didn’t know of a recipe to make at the time, I picked it up.

Since I’ve been baking a lot since we moved, I tend to keep either a white , butter, or yellow cake mix on stock in my cabinets. The recipe I found to make these yummy apple cupcakes called for white cake mix, but I had butter cake mix so that was what I used. They still turned out heavenly. I would have made the icing from scratch, but since this icing is what inspired the whole baking bit, I decided to go ahead and use it. I will tell you – it’s very sweet. It tastes delicious, but next time, I will make my own caramel buttercream frosting. Homemade is so much better.

Every teacher knows if you want a peaceful year, there are two groups of people you need to wow — the custodians and the secretaries. Of course, everyone else is just as important, but those two groups of individuals can make your work day run so much smoother. The very first year I taught, I made a batch of these and gave them to those two groups, they loved them and knew I appreciated all their hard work. My husband had a pot luck now that the government is back to work, so I decided to make some of these.

Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 2/3 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups water
  • 2/3 cup vegetable oil
  • 2 tablespoons white vinegar
  • 2 teaspoons vanilla extract
  • hot fudge sauce (don't warm it up, you want it really stiff)
  • 2-3 mini Milky Way candy bars, cut up or crumbled
  • Chocolate Caramel Frosting

Instructions

  1. Heat oven to 350°F. Line muffin cups with paper bake cups.
  2. Stir together flour, sugar, cocoa, baking soda and salt in large bowl. Add water, oil, vinegar and vanilla; beat on medium speed of mixer 2 minutes. Fill muffin cups 1/3 full with batter.
  3. Spoon 1 level tablespoon hot fudge sauce into center of each cupcake and cover with remaining batter.
  4. Bake 20 to 25 minutes or until wooden pick inserted in cake portion comes out clean. Remove from pan to wire rack. Cool completely. Top each cupcake with Hershey's Chocolate Caramel Frosting and Milky Way crumbles.

Easy Peasy Lemon Bars

Sometimes you see something in the store and that immediately makes you want to try it. I’ve never made lemon bars before, but I was feeling daring. The hubby wanted them as did I, so I decided to give it a shot. I found a recipe online and altered it ever so slightly. The only problem I found was that I wanted them to be thicker. I think next time I will use a smaller pan.

Salted Caramel Brownies

Ingredients

    For Brownies:
  • Soft butter and flour for greasing and dusting the pan, unless you use spray
  • 4 large eggs
  • 1 cup sugar, sifted
  • 1 cup brown sugar, sifted
  • 8 ounces melted butter
  • 11/4 cups cocoa, sifted
  • 2 teaspoons vanilla extract
  • 1/2 cup flour, sifted
  • 1/2 teaspoon salt
  • 2 to 3 teaspoons flaked sea salt (save for the end)
  • For Caramel Sauce
  • 14 ounces caramels
  • 1 can (14 ounces) sweetened condensed milk

Instructions

  1. Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan or use spray.
  2. With a mixer, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
  3. Pour the batter into a greased and floured 8-inch square pan, set aside.
  4. In a large saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over brownie layer, making a pattern of gooey-yumminess.
  5. Bake for 40-45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. Sprinkle with sea salt. Allow to cool.

Pumpkin Cinnamon Rolls with Caramel Frosting

In my quest to find new recipes to use pumpkin with, I stumbled upon a dessert that I had to try. While it requires a lot of ingredients and quite a bit of time, trust me when I say it’s worth it!

I tweaked the original recipe I found and added more pumpkin, making my rolls more orange. I need to take that into consideration next time because the dough didn’t roll as well as I hoped it would. Luckily, these rolls tasted delicious no matter how messy they looked.

EASY! Pumpkin Muffins

I’ve been staring at the falling leaves this past week, craving pumpkin. When my homemade pumpkin spice latte’s weren’t enough, I searched in my cabinets and found canned pumpkin. Then, thanks to the internet, I found this amazing recipe at Very Best Baking. What came of it was amazing and left everyone wanting more.

Made From Scratch Biscuits

I love breads. I love biscuits. Pretty much all carbs, but I have to limit them or find myself gaining a ton of weight. I’ve been working on my cooking skills since we moved and decided one morning to give homemade biscuits a go.  I think they turned out pretty great.

Evil Genius (12 yr old Neaglet) said they were delicious and reminded him of Cracker Barrell, so I’m doing something right.

Wanna try to make your own biscuits from scratch? I used this popular recipe from the Food Network.

Ingredients

2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled

Directions

Preheat oven to 450 degrees.

In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don’t want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.

Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that’s life.)

Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

Hungry Girl Chew On The Right Thing

I am a huge fan of the Hungry Girl cook books. This set of books has me dying to get healthy and stay healthy. When I went to Barnes & Noble, while on a mini-vacation with the family, I found this recipe card box and grabbed it.

Everything about this box set is nothing short of awesome. The only drawback is if you own the original HG cookbook and the HG 200 Under 200, then you already own all these recipes. I did not realize this when I found it. I just bought it and continued throughout my day. However, even if I knew this, I would have purchased it.

I love the layout of these recipe cards.


These cards contain the top 50 wanted recipes of foods we crave, but don’t want to overindulge on. I love how the cards re color coded based on category.
