Yes, I did probably the dumbest thing a person losing weight could do. I got on the scale on a day that I was NOT supposed to. And of course I was bloated and retaining water and all the HORRIBLE womanly BS that comes with being a woman! So the scale went up. I don’t think it’s really accurate…I REFUSE to think that it is after having such a great weigh in the other day. I guess Sunday will tell…
ANYWAY, I decided with the snow here in SoMD (Southern MD) I would be a bum and we would eat breakfast for dinner – it’s always comforting. So I searched my cabinets and decided I wanted waffles.
YUMMY LOW-CARB “DESSERT” WAFFLES
- Whole Wheat Aunt Jemima Pancake/Waffle Mix (high protein, low carb)
- Smart Balance Omega Veggie Oil
- Eggland’s Best Eggs – 1
- Soy Milk or 2% Milk
- Pure Vanilla
- Cinnamon
- Splenda Brown Sugar
- Follow directions on box for making waffles (1-1/4 cup mix, 1-1/4 cup milk, 3 tbsp oil, 1 egg)
- Mix until no clumps
- Add 2 tbsp Vanilla, approx 1 tbsp cinnamon, and 2 tbsp splenda brown sugar mix
- Stir to mix
- Peel off using fork and allow to cool on plate
